花期は5 – 6月ごろ、風媒花で雌雄同株です。雌花は新枝の先に10個ほど穂になって咲き、雌蕊は真っ赤で二股です。 雄花は前年の枝に多数房となって垂れ下がります。
The male cylindrical catkins are developed from leafless shoots from the past year; they are about 10 cm in length and have a large number of little flowers. Female flowers appear in a cluster at the peak of the current year’s leafy shoots.

胡桃にはいくつかの種があり、古くから食用にされてきました。日本自生の胡桃は皮が硬くむき難いオニグルミが多いです。
The male flowers are in drooping catkins 9–40 cm long, the wind-pollinated female flowers (April–May) are terminal, in spikes of 4 to 10, ripening in August–October into nuts with densely glandular pubescent green husk and very thick shell.
